Crispy Tofu Katsu Curry

A typical 400g block of tofu contains enough water to turn a crisp coating soggy if you skip one simple step: pressing it. This recipe fixes that problem with a firm tofu centre, a crunchy panko crust, and a mild curry sauce built for a British kitchen.

Why tofu katsu stays crisp instead of turning soft

Katsu works because it creates contrast: a dry, crunchy shell around a tender filling, followed by a smooth sauce that adds heat, sweetness and salt.

The crisp coating is a moisture problem

Tofu holds a lot of water. When wet tofu enters a hot oven or air fryer, that moisture escapes as steam. Steam softens breadcrumbs from the inside, so the coating can look brown while still feeling limp. Press the tofu for 20 to 30 minutes, then pat every surface dry. A heavy saucepan, a chopping board and a clean tea towel are enough. Do not press so hard that the block crumbles before coating.

The curry sauce needs balance, not brute heat

Katsu sauce is not the same as a thin soup. Onion, carrot and garlic give it body, while curry powder provides warmth. Stock loosens the mixture, and a small amount of flour helps it cling to rice and tofu. Soy sauce supplies savoury depth; maple syrup or sugar rounds off the sharper spices. The winning sauce is mild enough for most diners but still aromatic.

The best serving order is rice first, sauce beside it, and sliced tofu on top. Pouring sauce over the entire crust immediately creates the exact sogginess this method is designed to avoid.

Use firm or extra-firm tofu. Silken tofu will not survive pressing, coating and turning. Naked Tofu in a 450g pack, and Clearspring Organic Tofu in a 300g pack.

Check the panko packet if you need a gluten-free meal: standard breadcrumbs often contain wheat. Use tamari instead of soy sauce for a gluten-free sauce, and choose a plant milk without added vanilla or sugar. The recipe does not need egg, dairy or a deep fryer.

How to make crispy tofu katsu curry step by step

Plate of rice with curry sauce and a spoon

Cook the curry sauce before the tofu. It can sit over low heat while the coating bakes, but the tofu should not wait under sauce for long.

  1. Press tofu for 20 to 30 minutes. Wrap the drained block in a clean tea towel. Place a board on top and add a saucepan or two tins. Replace the towel if it becomes soaked. Slice the tofu into four pieces about 1.5cm thick, then pat them dry again.
  2. Heat the oven to 200°C fan, 220°C conventional or Gas Mark 7. Line a baking tray with baking paper and brush it with 1 tablespoon of neutral oil. An air fryer also works at 200°C, but cook in batches so hot air can reach every side.
  3. Start the sauce. Fry one finely diced onion and one diced carrot in 1 tablespoon of oil for 8 to 10 minutes. Add two crushed garlic cloves and cook for 30 seconds. Stir in 2 tablespoons of curry powder and 1 tablespoon of flour. Keep the pan moving for 60 seconds so the spices toast without burning.
  4. Pour in the 600ml vegetable stock a little at a time, stirring after each splash. Add soy sauce and maple syrup. Simmer for 15 minutes, until the carrot is soft. Blend until smooth or leave it textured. Add the rice vinegar at the end, taste, and adjust salt or sweetness.
  5. Set up three shallow bowls: flour in the first, plant milk in the second, and panko with a pinch of salt and pepper in the third. Coat each tofu slice in flour, dip it into plant milk, then press it firmly into the panko. Cover the edges as well as the flat surfaces.
  6. Place the coated tofu on the tray with space between each piece. Brush or spray the tops with a little oil. Bake for 20 to 25 minutes, turning carefully after 12 minutes. The crust should be deep golden and dry to the touch. In an air fryer, cook at 200°C for 12 to 15 minutes, turning halfway.
  7. Rest the tofu for two minutes, then slice it with a sharp knife. Serve with rice and curry sauce on the side. Add spring onion, coriander, chilli oil or lime only after the main dish is plated.

The sauce can be made one day ahead and reheated gently with a splash of water. The tofu is at its best on the day it is cooked because the crust loses texture in the fridge.

The mistakes that make tofu katsu curry soggy

The winning move is simple: keep moisture away from the crumb until the last possible moment. Most failures come from crowded trays, weak heat or sauce poured over the crust too early.

  • Skipping the press: wet tofu steams inside the coating and produces a soft crust.
  • Using silken tofu: its delicate texture breaks during dredging. Choose firm or extra-firm tofu.
  • Making thick slices: pieces over 2cm take longer to heat through and need more time in the oven, which can darken the crumbs.
  • Leaving gaps uncovered: bare corners split when the tofu is turned. Press panko onto every edge.
  • Overcrowding the tray: trapped steam prevents browning. Leave at least 2cm between pieces.
  • Using a cool oven: below 200°C fan, the coating absorbs oil before it firms.
  • Adding too much sauce: spoon sauce beside the tofu, not over the top.
  • Cutting too soon: a two-minute rest lets the crust set and reduces crumbling.

If the coating still feels pale, brush it with a little oil and cook for another 3 to 5 minutes. If the sauce is too thick, loosen it with stock. If it tastes flat, add rice vinegar before adding more curry powder; extra spice cannot fix a missing sharp note.
